It is a training program for a company that sells fast food chicken. The term "leaf fat" appears in relation to the thigh of chickens. The person preparing the chicken is instructed to take the "leaf fat" off the thigh.

I know that leaf fat (in pigs) refers to the highest quality fat found in the carcass, generated from the kidney area, but I have never seen applied to chicken, and even less to chicken thight!, and I cannot find the Spanish for it.
