Pastry
This is from a recipe for a pastry, which is summarized at the beginning as follows:
Finger food de lionesa o petisú de cacao con un crujiente de galleta crumble de cacao en la parte superior y relleno de crema pastelera de chocolate y ron.
I think lionesa is puff pastry, and petisu sounds a bit like patissier, but that may be a coincidence. I''ve also found this by googling, which may help:

Note from asker:
Thanks for your answer, Rosa. If this is correct, the obvious question is what's the difference between petisu and lionesa? |

: I believe petisu and lionesa are the same if you compare recipes: http://www.gallinablanca.es/receta/lionesas-rellenas-de-nata...
http://www.marthastewart.com/recipe/petits-choux-with-rose-c...
I would use puff pastry for both.

Comment: "Thanks very much. I'm not 100% sure of this, but it seems the most likely answer as it's apparently a type of dough rather than a cake. I think it may come from pâte de choux rather than petits choux, "

Lisa McCarthy
: I think 'cream puff' or 'eclair' are correct but which word you use depends on what they look like - round or oblong?

Thanks Lisa Mac: Many years ago; when I was growing up in south Florida; I used to hang out at a fancy ice-cream parlor with my girl friend; we were both eclair addicts, they were long, filled with cream and covered with chocolate... :)9

Petits Choux
Another option
I believe petisu is a Spanish spelling of the French Petits choux.
PETIT CHOU o CHOU: petisu.

: I agree with your explanation but I think we need an English translation as I don´t think the French is actually used (not in the UK anyway)

éclair
Éclairs are oblong and cream puffs are round.
The vast majority of images for "lionesa" are round and more images for "petisú" are oblong than round, so I would so with cream puffs to translate "lionesa" and éclairs for "petisú".
I do think what is being described is either of these two, not just the puff pastry. Notice your text says "RELLENO de crema", filled with, not topped or coated with rum chocolate cream - with cocoa crumb topping (or topped with cocoa crumbs).
****************
An éclair is a delicate, individual pastry made with chou paste (choux paste, pâte à choux, cream puff pastry dough). The dough is piped from a pastry bag in an oblong or log shape on baking pans, and baked until it is crisp and hollow inside. It is either filled from a hole made in one end, or split lengthwise and filled. The filling is traditionally ... Other fillings include coffee and rum flavored custard, fruit flavored fillings or chestnut purée, and the topping is usually flavored the same as the filling.

crumbs, a cake topping made of sugar, flour, butter, and spice, usually crumbled on top of the raw batter and baked with the cake.

eclair
As a pastry chef and translator, this is absolutely an eclair, and made from pate choux, or choux paste, not puff pastry. You might stretch it to a cream puff or profiterole, also made from the same dough.
