How does "cria" fit gramatically into the following? I understand this as diffusion of the technology, breeding, and harness (redundant because harness is part of the technology, but that's another story). Am I right?

I read this as the noun "young" (Conjunnt de fills d'un animal). Though the position here is a bit odd.
So I'd say:
"technology such as raising young, saddle mounts and load carrying harnesses."
Or something like that.

Your translation seems quite right to me. Ae, the harness bit could be redundant, but perhaps the author didn't see it as part of that technology or just wanted to make special mention to it. Anyway, breeding is good enough. Salut :-)
