Lobster risotto with bisque glace

Hello,

This is part of a dish description and the dish is as follows:

Risotto All’ Aragosta
랍스터 리소토
Lobster risotto with bisque glace


From what I've been told, the bisque glace, is sort of a Demi-Glace for Shellfish, a thick shellfish stock made by boiling the shellfish with butter and sometimes, adding some type of alcohol.

bisque glace is translated as "비스뀌 글라스", in Korean, we usually put reduction or sauce name in front of the food name so it can be translated as 비스뀌 글라스 랍스터 리조또

agree Jungho Jo : Normally we put the description of a dish below its name. The pronunciation is closer to "비스꾸에 글라체 랍스터 리조또". It is not accurate at all, though.

"비스뀌 글라스" is more commonly used. At least that's what chefs use.

비스끄 글라스를 곁들인 랍스터 리조또

Foreign culinary terms in Korean are scarcely established, so they are often 'written down' according to pronunciation of original language.

Bisque glace is originally french, so I chose 비스끄 글라스
곁들인, because it is the most frequent form to indicate 'with'(or'avec' and 'à la/au' in french)

The reason why I chose 비스끄 but not 비스뀌, 비스꾸에, is because in Korea, the origianl pronunciation will automatically turn into correct spelling. So for the french originated term, the french pronunciation will attain appropriacy in such a context.

According to context, for example if you use this term as a simpler name, this would be 비스끄 글라스 랍스터 리조또. This could be 2nd good option but the meaning will be not greatly comprehensive because the relation of the words aren't so perceptible in the construction of words.

agree Abigail Lee : I would go for this one. When I read 비스끄 글라스를 곁들인 랍스터 리조또, even if I don’t know what the dish is but I can still guess the dish pretty well.

진한 랍스터 소스를 끼얹은 랍스터 리조또

Hello,

Risotto is an Italian dish whereas bisque glacé is a French cooking technique. It must be a modern European menu in which the northern Italian fare is adorned with meat and jus of the shellfish. I presume it may be a bit soupy with the reduced stock made from lobster shell and thus I would call it 진한 랍스터 소스를 끼얹은 랍스터 리조또. I used the term sauce because it is a broader term that is easily understood in Korean as well.
