Misturar a farinha de trigo sarraceno com a farinha de trigo.
Adicionar a água a ferver e misturar bem até desfazer qualquer grumo.
Deixar repousar até a mistura estar morna.
Adicionar a água tépida até formar uma massa macia.
Amassar alguns minutos com a mão ou batedeira até que a mistura fique lisa e não cole às mãos.
Dividir em 4 porções. Reserve 3 em película aderente para que não sequem.
Polvilhe farinha na bancada e, com a ajuda de um rolo, esticar a porção de massa.
A massa pode ser passada na máquina de fazer massa (laminadora).
Quando a massa estiver esticada e na espessura correta, cortar com adaptador ou com uma faca.
