My understanding: The data items recorded will vary depending on the grade and optional equipment. Please note, the computer does not record any audio or in-car video footage of the conversations.
My Issue: グレード・オプション. Is it grade and optional equipment or grade option equipment? How do we translate the ・?

As Port City noted, in this case it is clear that the "・" is being used not to mark word separation (a use that seems to be becoming less common in Japanese) but instead to mean "and", "or", or "and/or".
Although "grade" can sometimes be used in English for this meaning (see https://www.autoblog.com/2018/10/19/trim-level-glossary/), in US English it mostly seems to be used in the world of car auctions to classify a car's "condition".
For reference sake, a Google search for "depending on grade and options" yields 11 results, 1 of which refers to elementary education and 5 more of which come from outside the US (mostly Australia), while a search for "depending on trim level and options" yields 124 results, all of them apparently referring to cars and predominantly coming from US websites. vehicle grade and optional equipment added
It means grade and optional equipment, but just saying "grade" may not be clear as to what it refers to and "optional equipment" not added does not affect the recording. Hence, I suggest "vehicle grade and optional equipment added" to make it clearer.
